r Azure Market organic potato starch is a wonderful substitute for cornstarch as well as a great gluten-free flour replacement. It can tolerate higher cooking temperatures than cornstarch, so it’s a great thickener in recipes like soups or sauces.

r You can also add our organic potato starch to baked goods to retain moisture. However, it’s best to mix it with other flour substitutes; baked goods made with only potato starch in place of flour may end up a bit dry.

Directions
r Substitute 4 tsp of potato starch per 1 Tbsp of cornstarch. If using as a thickener, mix with a small amount of water to reduce clumping. When using in sauces or gravy, add just before serving.
