Hojicha in Japanese means “roasted tea,” and ours is made using kukicha which gives it its toasty flavor and sweetness. Like all Japanese green teas, hojicha is first steamed and then roasted, which gives it the brown color and also breaks down the tannins, flavonoids, and caffeine in the leaves.
